Organic, Natural, no fining or filtering. 100% Sabbagheih (also known as Marini, a rare indigenous Lebanese grape) Sabbagheih means "dye" or "stain" in Arabic, since it produces a very dark juice. Very small batch Lebanese wine made by a nomadic Lebanese winemaker, Rami Bassil El-Sabban, who borrows space from Château Cana and Mersel wineries. This red is round, rich and dry. Full bodied with notes of balsamic, plum, and jallab (a type of fruit syrup made from carob, dates, grape molasses, and rose water). A blend of two seperate tanks of Sabbaghieh. The first tank being a late harvest Sabbaghieh (40%) blended with a slightly less ripe Sabbaghieh (60%), which was macerated on its skins for just over a week and a half. Both were fermented and aged in stainless steel tanks before assemblage.
