The grapes are selected one month before harvest, which takes place on August 25th, and allowed to macerate for eight hours in stainless steel. Hand-harvesting is done in two passes, the first is used to build the ambient yeast for the remainder that is to be harvested. The entire fermentation lasts a total of 20 days in stainless steel with temperature control. Aged for six months on the lees with stirring once a week.

The roots of Caruso & Minini harken back to the late 1800’s when Antonio Caruso bought the company to grow grapes for the nearby Marsala factories. In 2004, Stefano Caruso met Mario Minini and together they built a family winery. Today, Stefano and his daughters Giovanna and Rosanna work side by side to create unique wines using indigenous Sicilian grapes like this Inzolia Zoli which is characterized by intense and elegant fragrances. This Côtes de Provence from the Sainte-Victoire is vinified using direct pressing and fermentation at low temperatures in order to preserve the aromas in the fruit. Gassier is a delicately pale wine in shades of peach. The nose is very expressive with fruity notes such as white peach and fragrant white pomelo. A well-balanced, smooth wine, with lovely peachy aromas, superb length and notes of yuzu zest on the finish. Bekaa Valley, Lebanon. L'Arack De Musar 750ml The Chateau Musar Arack is made from grape alcohol with an average age of five years. Traditionally, arak is distilled twice, the anise seeds are added in the third distillation. L'arack de Musar is unique in that it is distilled four times with the addition of anis seeds during the 4th distillation. After distillation, it is aged for one year in terracotta amphora's which contribute to its licorice aroma. It is customary to add water to Arack when serving it as a digestif, but L'arack de Musar can be enjoyed without water. It is surprisingly smooth, sweet and very easy to drink. The additional distillation results in a very pure and sophisticated Arack.

Bekaa Valley, Lebanon. Vegan, Organic, Natural. Musar Jeune Red is an unoaked blend of Cinsault, Syrah and Cabernet Sauvignon from youthful Bekaa Valley vines. Meant for current consumption – within a few years of the harvest – this deeply-colored, vividly fruity style, first produced in 2007, may yet prove to be a ‘keeper’. Deep purple beetroot colour with a nose and palate of more red fruits than black; strawberries and cherries. Unoaked, with a savoury, earthy depth and a touch of spice and black pepper. It is an elegant wine with layers of taste and lots of potential to age and develop. Dry & Light to Medium Body and very fruity. No need to decant; enjoy straight from the bottle at between 60-62°F with grilled meat, charcuterie and mature cheeses. This wine is suited for vegans as it is not fined nor filtered.

Bottled unfined and unfiltered, Hochar Père et Fils Reds are suitable for vegans; they’re also richly-textured and likely to produce deposits in bottle. This is a feature of most fine wines. Ideally, the wine could be decanted (discarding any sediment) up to one hour before serving at between 16-18°C. This wine is an ideal choice for casseroles, roasted meats, tuna steaks and Mediterranean dishes. Deep burgundy in color with transparent layers showing evidence of Grenache in the blend. Ripe red cherry fruit with plums, dates, mulberries and tea leaves. It is Mediterranean on the palate with sweet tannins and spices. It becomes even better and more refined a day after the bottle is opened. The red wines of 2020 are wines of taste and concentration and the Hochar Red of this year is no exception.

Red cherries, mulberry, plum and tobacco with a hint of dates – it is a richly fruited wine with developed tannins and a long finish. The 2022 vintage has great potential for the years ahead. Roberto’s mission on his land began in 2017 - to respect the environment, with socially fair, safe and sustainable actions across every aspect of his work. Zaer, Morocco. Organic. The 2022 Terre Blanche from La Ferme Rouge is composed of organically farmed Chardonnay, Sauvignon Blanc and Viognier. Think honey, dates, molasses and chewy caramels, this wine is an experience. Open it up and sit by the fire. Give it a few minutes in the glass to oxygenate and the flavors will change. Mount Helicon, Greece. Organic. 100% Mouhtaro The very rare red grape of Mouhtaro is grown exclusively in the area of Askri, at the foot of Mount Helicon, in Thiva, Central Greece. Muses Estate was the first producer to revive this grape variety thanks to the efforts of Athanasios Zacharias, who brought it back from near-extinction and produced the first vintage in 1998. Muses estate was named after the Muses from Greek Mythology, who were said to have lived on Mount Helicon.
