We built a bio-humus producing plant so as to restore soil fertility; we planted six most ancient Kakhetian grape varieties, including Mtsvivani, Khikhvi, Kisi, Kakhuri Mtsvane (Kakhetian Green), Saperavi and Vardisperi Rkatsiteli Pink Rkatsiteli). This Mockvin du Broc Rose is an excellent example from this appellation. Inspired by the Macvin fortified wines of the Jura region of France, the grapes are foot-stomped and the juice is fortified with brandy distilled from the same grape.
