    New York, USA. Catskill Provisions Distillery is a New York based company born out of a beehive -- literally. Born in Madrid and raised in New York City, Claire M. Marin is the CEO, founder and chief beekeeper of this wonderful establishment. She started beekeeping as a hobby and grew into a business of small-batch hand-packed honey. The honey is the star ingredient infused into their handcrafted spirits. The herbaceous spirit Crimson Amaro is naturally red colored with cochineal and was inspired by traditional Italian Amari. Created in their distillery in Long Eddy, NY, a base of Pollinator Vodka is infused with a secret blend of more than 15 botanicals, among them juniper, wormwood, sage, angelica, gentian, and orris root. Highly aromatic, intriguingly complex, the result is a beautifully balanced bittersweet tonic that can be enjoyed over ice or mixed into cocktails, from a Spritz to a Negroni. 750 ml

This vino amaro is in Forthave Spirits’ historical line, where ancient medicinal recipes are reinterpreted as digestivi. With a deep ruby color reminiscent of a port, this fortified and aromatized wine-based amaro balances sweetness, bitterness, and spice. The addition of herbs, citrus and other botanicals gives a warming sensation that mixes with the vinous notes of dried, sweet fruit. The bitterness from chincona bark compliments the fine tannins and adds depth and complexity. It is at once earthy and fruity with notes of figs, cedar, and mace. Based on a natural wine of 100% Seyval Blanc made for the distillery by their frequent collaborators and New York Natural Wine virtuouosos Barbichette, three separate infusions are made with rare white génépi flowers from a single grower in the Savoie alpine region of France, before all is blended together. The wine base, separate infusions and deft blending make for a liqueur that is less harsh, less bitter, more approachable and easily enjoyed on ice, with a splash of sparkling water or mixed up.     Made in Industry City, Small-Batch. The Rose Aperitivo uses 2 different varieties of rhubarb root for perfume-like aromatics and earthy depth. The rosé wine base lends to a more berry forward side with bitter orange peel and rhodiola to carry citrus notes. For all of our cordials, Standard Wormwood uses the larger family of Artemisia (wormwood relatives), concentrating on the herbaceous Sweet Annie (sweet wormwood) that we forage wildly from our upstate farm. It is essentially cocktail strength on its own and can be sipped neat or on the rocks, and even though it's very different than Campari, it can be used as its replacement in a number of cocktails like a Negroni or Spritz. 375ML.

    Bekaa Valley, Lebanon. L'Arack De Musar 750ml The Chateau Musar Arack is made from grape alcohol with an average age of five years. Traditionally, arak is distilled twice, the anise seeds are added in the third distillation. L'arack de Musar is unique in that it is distilled four times with the addition of anis seeds during the 4th distillation. After distillation, it is aged for one year in terracotta amphora's which contribute to its licorice aroma. It is customary to add water to Arack when serving it as a digestif, but L'arack de Musar can be enjoyed without water. It is surprisingly smooth, sweet and very easy to drink. The additional distillation results in a very pure and sophisticated Arack.

Then, this pure grape alcohol is redistilled in a specially designed alembic made in France with the aniseed: Ksarak only uses aniseed from the reputed Mount Hermon's Al Heeneh area in Syria. The delicate scent of the prime aniseed is appealing to the true connoisseur. Only the "pure flower" obtained through an independent pipe is used to make the arak. Finally, this spirit is refined to release the purest and healthiest arak. Ksarak is finally matured for 2 years in clay jars manufactured in Beit Chebab following ancestral norms.     Judean Hills, Palestine. The Cremisan monastery and winery was founded in 1885 by Fr. Antonio Belloni an Italian Salesian Monk. He opened the wine operation in an attempt to create a revenue source for the monastery’s orphanage. Cremisan is located on the northern slope of Mount El Ras just outside the city of Bethlehem and only 12k away from Jerusalem. The name Cremisan comes from the Arabic “Kerem Zan” meaning the Vineyard of Zan grapes, an indigenous Palestinian varietal. Cremisan was the first winery in the region to use indigenous Palestinian grapes, sparking both regional and international interest in Palestinian grapes. Hand picked in mid September. Staff fav! Cremisan’s Arak is the perfect combination between fresh, vibrant anise and the bouquet of Dabouki grape variety; it is distilled three times using a 1974 copper distillery to give a smooth, refreshing taste with a sweet finish and a tingling texture. The genesis for GREEN began In the spring of 2023 when a farm in the Hudson Valley approached us about working with produce grown as part of their regenerative agricultural practices. Using this produce as a jumping-off point, we macerated, distilled, blended, juiced, and cooked over 50 different plants both fresh and dried. The palate is layered and complex: fresh and vibrant, with soft sweetness. Served neat or over ice, GREEN offers a vivid herbal aroma of fresh mint and hyssop leading into crisp lemon-balm lift. They spend about a week foraging in the Hudson Valley, drive the walnuts to Brooklyn, chop them up and macerated them in a steel tank for 9 months, then rack off the liquid, sweeten it with raw, organic sugar, and then let it rest for another 9 months in steel tank as well as glass demijohns that we leave in the windows of our distillery to soak up the sun! Now, they are our neighbors in Sunset Park, Brooklyn! Wermut means wormwood in German and is actually the base for the word Vermouth, an ancient combination of wormwood and wine. This Semi-Dry Wermut allows the white wine base from Anthony Road Wine (Finger Lakes, NY) to come forward and mingle with the citrus herbaceous notes of Redstem Wormwood and floral jasmine aromatics. Lemon and watermelon come to mind as the bitter complexity of Genepi is left on the dry finish. Mix with other cordials for a variety of Spritz's or naturally with a gin for a vermouth forward 50/50 Martini.

Wormwood extends the finish leaving you with savory depth after schisandra berry and a varied spice trail carry the body. Perfect for sipping neat or on the rocks, you can also transform a classic Manhattan or Negroni with the added depth of this fine spirit. 375 ml. 17.5% Alcohol.
